How did Halloween arrive so quickly on our doorstep?

I've raced around this week attempting to cross all the t's and dot every i. The fact of the matter is Wednesday night rolled around and I hand't put finishing touches on Jackson's costume, made the halloween sugar cookies for decorating, made the sweet treat for our office party or even conjured a great idea for our halloween costume contest at work.

Needless to say, a few last touches didn't make it to Jackson's costume and we'll be having cookie decoration festivities post-Halloween. But? The good news is despite a few minor setbacks, the most scrumptious treat I've made all month graced my kitchen last night!

For all you busy mamas, this last minute Halloween recipe is made especially with you in mind...and my co-workers who I promised a sweet treat. 

Now, onto the Oreo Brownie Bites!

Oh yes, that's an Oreo being dipped in brownie batter. Prepare yourselves, friends, you may not want to share! 

Now, grab your purse and hit the grocery before that last box of Halloween Oreos is snatched off the shelf! All you'll need is a box of Oreos (Halloween colored or not), a box of brownies and festive toppings.

Preheat your oven to 350 degrees and grease your muffin pan almost excessively (this is key!) then set aside. Prepare brownie batter per the box instructions then break out the Oreos. One by one hand dip the Oreos in the batter and place into muffin tin. Bake for 10-13 minutes or until toothpick comes out clean.

Once the brownies have baked, be sure to run a plastic knife around the edges in case any spots are sticking to the pan. Remove brownies from pan and allow to cool. Prep your frostings and sprinkles and get to decorating!
